Firm cheeses add flavour with less water than very soft cheeses. Salty cheeses also change how much added salt is appropriate.

Protect the crumb structure

Fresh herbs bring bright flavour; dried herbs are more concentrated. Wet vegetables should be cooked or drained when the recipe requires it.

Finish and serve

Serve with soup, salad, eggs or as part of a brunch. Refrigerate muffins containing fillings that require cold storage.
