Choose the main ingredient

Canned pumpkin purée is not the same as sweetened pie filling. Purée adds substantial moisture and colour.

Protect the crumb structure

Cinnamon, ginger, nutmeg, cloves and allspice have different strengths. A blend should support, not erase, the pumpkin.

Finish and serve

Seeds, nuts or a simple crumb topping add contrast. Cream-cheese fillings make refrigeration and transport more important.

  • Follow the recipe’s pan size and oven setting.
  • Cool before sealing to limit condensation.
