Compare metal, silicone, light, dark, mini, standard and jumbo pans.

Metal pans

Metal conducts heat efficiently. Dark finishes can brown edges faster; light finishes may bake more gently. Pan weight and cavity shape vary.

Silicone pans

Silicone releases easily but is flexible and may brown less. Place it on a rigid tray if the manufacturer directs.

Capacity matters

“Standard” is not perfectly standardized. Measure cavity capacity when converting a recipe and avoid assuming all jumbo pans are equal.

Practical checklist

  • Use a tested recipe as the baseline.
  • Measure flour and leavener carefully.
  • Keep notes when changing ingredients or pans.
  • Cool completely before long-term packaging.
