The Basic Muffin Method

Prepare before mixing

Preheat the oven, prepare the pan and measure inclusions before wet and dry mixtures meet. Chemical leaveners begin working when moistened.

Combine without chasing smoothness

Stir until no large pockets of dry flour remain. A few small lumps can be preferable to prolonged mixing, which develops gluten and can toughen the crumb.

Portion and bake

Divide batter evenly, use the stated rack position and check the recipe’s doneness cues. Cool briefly in the pan, then move muffins when appropriate to prevent soggy sides.

  • Measure flour and leavener carefully.
  • Keep notes when changing ingredients or pans.
