North American quick-bread muffins
These are portioned into cups and leavened mainly with baking powder or baking soda. The batter is mixed briefly and baked, producing a tender crumb and domed top.
English muffins
English muffins are yeasted, griddled breads with a chewy crumb and open interior. They are usually split and toasted, then served with butter or as a sandwich base.
Do not substitute blindly
Their moisture, structure and serving roles differ. A breakfast sandwich recipe written for an English muffin will not behave the same with a blueberry muffin.
Practical checklist
- Check whether a recipe means quick bread or yeasted bread.
- Store and reheat according to the product type.
- Compare them by purpose, not sweetness alone.
